A Diplomatic Delight: Chef Guy Baldwin’s Culinary Showcase at the British Embassy


Recently, I had the unique honor of preparing an exclusive two-course menu for a private luncheon hosted at the British Embassy in Phnom Penh, attended by twelve distinguished ambassadors representing a range of nations and cultures. This unforgettable experience not only celebrated the art of fine dining but also underscored the subtle power of food as a tool for diplomacy, connection, and cultural exchange.


As a chef and owner of Baldwin’s Bistro, my passion lies in crafting cuisine that bridges traditions—bringing together refined European techniques with the vibrant ingredients of Cambodia. Designing a menu for such a prestigious audience was a challenge I embraced with enthusiasm and humility.


The menu I prepared was intentionally simple in structure, yet layered in technique and flavor. For the starter, I served a cured Kampot pepper salmon with a delicate citrus emulsion, accompanied by pickled shallots and microgreens. This dish represented a fusion of East and West: the bold, fragrant notes of Cambodian Kampot pepper paired with the finesse of European-style curing and plating.


The main course featured a slow-cooked duck leg confit, infused with lemongrass and served over a bed of silky celeriac purée, with a tamarind reduction and roasted baby vegetables. It was a dish that expressed comfort, elegance, and cultural harmony all at once—a true reflection of my culinary philosophy.


Hosting this meal in the diplomatic setting of the British Embassy gave the experience a deeper meaning. Food, after all, transcends borders. Sharing a table fosters conversation, builds trust, and creates shared memories. Watching the ambassadors converse over each course—laughing, debating, discovering new flavors—was a powerful reminder of why I love what I do. Cuisine becomes a universal language, and the chef becomes the storyteller.


This event was not only a professional highlight but also a deeply personal one. As a British chef living and working in Cambodia, being invited to represent modern British-European cuisine on this scale felt incredibly special. It affirmed that food has the potential to connect not only flavors, but also people and perspectives.

Whether we’re welcoming guests for an intimate dinner or representing our culinary vision in prestigious spaces like embassies and official residences, our mission remains the same: to honor ingredients, celebrate culture, and create moments that linger far beyond the last bite.
